Tackling the List

You all probably think I’m talking about some big long to-do list that I’ve been pushing to the side forever. No. I’m talking about my pinterest recipes list. I have been ridiculously stressed out the past couple of days and just felt like crying 24/7, but I’m deciding to forget about it for now and focus on something a little bit more fun. Like cooking. I used to be huge into cooking and baking and have really lost it over the last couple of months. Hopefully going through all the recipes I’ve pinned over the years and never done anything with will inspire me to get my a$$ in the kitchen and get to work.

That’s really about all I can handle right now before I start eating everything in my house. Not even kidding, that’s only probably 1% of the recipes I have saved. I really need to get to work. Goal is to make all of these things by the end of April. Ready set go.


That’s about all I can handle thinking about right now. Today was a rough day mentally. Hopefully things will be fixed today. Keep your fingers crossed for me.

The Unhealthiest Dessert I Ever Made

Oops. My bad. I wanted a thin mint pie, so I made it. And it was delicious. And I am happy. The end.

It all started when Luke bought 4 boxes of thin mint cookies from my younger sister. Then we realized he had 4 boxes sitting on the counter, and we should probably do something with them rather than eating them all in 10 minutes. The Pinterest thin mint pie was found, as was a solution to our problem. As you can probably imagine, mine doesn’t look quite like this, but we’ll get to that later.


Thin Mint No-Bake Pie

The recipe is actually super simple. Here’s all you need:

  • 45 thin mint cookies
  • 1/4 cup butter (1/2 stick), melted
  • 8 oz. cool whip
  • 8 oz. cream cheese (1 package)
  • 1/3 cup sugar


Instructions are also really easy:

  • Crush up 24 cookies super tiny and mix with the melted butter. My sister helped me and just used her hands to do this, but I suppose you could use a food processer, too.


  • Push the mixture into a pie pan to cover the bottom and make a crust.
  • In a mixing bowl, mix the cream cheese and sugar together. Stir in the cool whip and remaining crushed cookies (21 of ‘em).
  • Put the filling on top of the crust.


The end! We froze ours, and I think it was even more delicious. Like a really, really lazy ice cream cake. Since it is girl scout cookie season and all, I’m sure many of you have a plethora of cookies in your house to use up. I bet you could do this with a lot of different combinations:

  • Tagalongs, and add a little peanut butter to the cream cheese
  • Trefoils, and add some almond extract and chopped almond to the filling
  • Samoa’s, and add some shredded coconut and coconut oil to the filling and drizzle the top with caramel

The possibilities are endless!


Isn’t it beautiful?! Not. I promise, it tastes delicious though.

Cheesy Tomato Pasta Bake

How good does this look?

So I found the recipe for this on Pinterest about a year ago. I made it once and it was phenomenal. Then I lost the recipe. My whole family loved it and wanted me to re-create it; so I did! I totally winged it and made up my own recipe based on what I could remember about the original, and I think it’s even better now. So here ya go Smile


Cheesy Tomato Pasta Bake

Serves: 8



1 box whole-wheat pasta (I like to use rigatoni noodles)

1 jar red spaghetti sauce (I like to use tomato basil)

1/3 cup cooking cream (I use Philadelphia Italian cheese and herb)

1/4 cup grated parmesan cheese

1/8 cup basil (If you’re using fresh, just use about 10 leaves chopped up)

1 small carton cherry tomatoes, chopped in half

1 mozzarella cheese ball

2 big handfuls spinach (You don’t have to add this one if you don’t want to)


  1. Cook the pasta. Drain and add spaghetti sauce, cooking cream, parmesan cheese, and basil. Stir.
  2. Gently stir in cherry tomatoes, mozzarella, and spinach. Sprinkle extra cheese over the top.
  3. Cook in metal pan at 350 degrees F in the oven for 30 minutes.


So easy! Something great to make if you’re cooking for 4 people or more. Or just cook for a few and have tons of leftovers. The leftovers of this are better than the dish right away, in my opinion.

Like many of you, I am obsessed with Pinterest. Not as much as I used to be, but I definitely have a plethora of pins (most unused) on my account. 8:00 am: work jazzercise

8:30-9:30 am: jazzercise class

11:00 am-12:00 pm: train new client

12:00-4:00 pm: work at gym

4:00-5:00pm: train client

5:30pm: Valentine’s Day surprise with Luke!


5:30 needs to get here, like now.


Any big plans for Valentine’s Day? I almost hope Luke’s big plans are to sit at home watching reality TV in our sweatpants and drinking wine. Just kidding….kinda.

A Productive Sunday? What?

Usually I reserve Sundays for sleeping in, a long workout, lots of catching up on my TV shows, and not putting real pants on. Today however, was a big change.

  • I woke up at 7 a.m. and ran a 10K and showered all before I would even normally be awake.
  • I went to church and taught Sunday School for my mom, who coordinates the program at our church.


  • I came home, did my laundry, cleaned my bathroom, and caught up on blogs.
  • I decided on a headshot for my business and started to make up a website.


  • I made a healthy, light lunch: a whole wheat sandwich thin with 2 tbsp. PB2 and 1 tbsp. raspberry preserves, baby carrots, hummus chips, roasted red pepper hummus, and Naked green juice.


  • I made about 40 calls to potential personal training clients and got 3 positive responses, which is actually a decently good response rate, believe it or not. I was a happy camper. That means I have 4 clients this week, and it’s only my second week! That makes me very excited.
  • I got my new business cards in the mail! I made a list of all the places I can take them to. They include my blog address, my twitters, my personal number, my gym number, my credentials, and a brief tagline. I love them. They’re super cute. I got them from VistaPrint for 250 for only $10! SUCH a good deal. I paid a little extra to get color on both the front and the back.


  • I helped my younger sister make one of those crayon melty art things that are all over Pinterest.
  • Currently I’m working on my website and am planning on writing a couple of letters to friends in other states tonight. And of course watching The Grammy’s and The Walking Dead. FINALLY!


P.S. Here’s a picture of Luke and I from the hockey game yesterday. I obviously need to buy it online in order to get that “proof” off. I’m still trying to decide if I want to, since I think it’s actually a pretty good picture.



I have an extremely busy week coming up, so I’m trying to catch up on everything I possibly can today. I’m planning on organizing all my recipes and workouts tonight during my TV shows.
